If you are wanting to have speeches at different points during the meal it is important that you have made sure they know when they will be eating (and I would generally suggest that you have them fed before the first of the speeches (unless you are having speeches before the meal) )

You may need to be very clear with your venue to explain the importance of this to you, it will certainly ensure that you have a happy team working with and for you.  It's also worth noting that weddings rarely run to time, and if they do run late keeping them on side is always a good thing ;)
